Recipe for stewed chicken in wine

Ingredients:
- 300 g of mushrooms
- 1 large onion
- 2 carrots
- 100 g of smoked brisket or bacon
- 2-3 cloves of garlic
- 2-3 bay leaves
- a few sprigs of thyme and rosemary
- half a bottle of red dry wine
- 300 ml of chicken broth
- salt, pepper
- oil for frying

Method of preparation:
1. Season the chicken pieces with salt and pepper.

2. Peel the mushrooms and cut them into 2-4 pieces.

3. Cut the onion into half rings. Cut the carrots into cubes.

4. Finely chop the garlic.
5. Heat a little oil in a deep saucepan, put the chicken, and fry on both sides until golden brown. Transfer to a plate.
6. Add the mushrooms to the pan and fry until golden brown. Transfer to a plate.

7. Add the brisket to the pan, and fry to melt the fat.
8. Add the carrots and onions and fry until the vegetables are soft.
9. Transfer to a plate.

10. Return the chicken to the pan.
11. Put the vegetables and mushrooms on top.
12. Pour the wine and broth.

13. Add bay leaves, thyme, rosemary, garlic.
14. Bring to a boil and simmer for 1 hour over low heat under a lid.

15. Serve either French style with fresh bread or with mashed potatoes, rice or couscous.
