Even if you choose firm tomatoes for canning, they often crack in the jar. This is because you immediately pour hot marinade over them. First, you just need to scald the vegetables, and only then cover them with liquid.

The idea of making juicy canned tomatoes that don't crack in a jar was published on the Instagram page of food blogger Iryna with the nickname irchik_martynchik. Vinegar should not be added immediately.

Ingredients:

  • tomatoes
  • parsley
  • bay leaves
  • black peppercorns
  • garlic

Ingredients for the marinade for 6.5 liters of water:

  • 2 cups of sugar
  • 1 cup of salt
  • 2 cups of vinegar

Method of preparation:

1. Put parsley, bay leaves, black peppercorns, and garlic in a jar.

2. Add tomatoes.

3. For the marinade, add sugar and salt to the water.

4. After boiling, turn off.

5. Pour 2 cups of vinegar.

6. Steam once, pour the marinade over the second time and close.
