Zucchini pancakes are a very popular dish, especially in summer, when the season of this vegetable begins. The classic recipe is quite easy.

But often you want to add some nuance to it to make a familiar dish presented in a new way. Mozzarella cheese is a good addition. The recipe for zucchini pancakes with mozzarella was shared exclusively with FoodOboz by nutritionist Viktoriia Stelmakh.

How to make zucchini pancakes.


  • 1 medium zucchini
  • 1 chicken egg
  • 1.5 tablespoons of rice (or regular) flour
  • 2 tablespoons of frozen corn kernels
  • 1 tablespoon of grated mozzarella
  • 1 teaspoon of tahini (or a teaspoon of sesame seeds)
  • A pinch of nutmeg

Method of preparation:

1. Grate the zucchini. After 10-15 minutes, squeeze it to get rid of excess moisture. Mix all the ingredients.

2. Fry the pancakes either on a dry frying pan or on a frying pan greased with butter or Ghee. They taste best with Greek yogurt.

You can also replace the corn with fennel, potatoes, or celery root to make this dish even healthier and more satisfying.
