Zucchini fritters: What to do to make them puffy and not spill when frying
Zucchini fritters are the perfect low-calorie dish for a light breakfast, snack, or even dinner. They can be served with sour cream, cream cheese or any other sauce. The main thing is to make a good dough.
One of the cooking blogs(moireceptuforeva) on Instagram posted a recipe for zucchini fritters. To make them puffy and not spread, salt them immediately before frying.
Ingredients:
- zucchini - 2 pcs
- eggs - 2 pcs
- onion (green onions can be used)
- flour - 5 tablespoons
- salt
Method of preparation:
1. Wash and grate zucchini on a medium grater. Squeeze the juice well out of the grated vegetable.
2. Chop and add the onion to the zucchini. Also add the egg and flour. Mix everything thoroughly.
3. Of the resulting mass set aside a part as on one frying pan. This batter should be salted to taste and immediately proceed to frying the fritters. In this way fry all the fritters.
As a side note, if you salt the batter at the beginning of cooking, the zucchini will leak a lot of its own juice the whole time, and then it will spread out during frying. Therefore, it is better to add salt right before you put the batter on the pan.
