Young nettle soup: a perfect dish for the beginning of spring
At the beginning of spring, there is an irresistible urge to add more greens, salads made from young vegetables, and light soups to your diet. One of the most popular spring soups is young nettle soup.
It is not only extremely tasty but also healthy. The recipe for this wonderful spring soup was shared on Instagram by a food blogger with the nickname recepti_dariko.
Ingredients
- meat (preferably with bone) - 500 gr
- young nettles - 200 gr
- potatoes 4-5 pcs
- carrots - 1 pc
- green onions - 1 bunch
- oil - 1-2 tbsp
- onions for broth
- salt
- pepper
- dry garlic
- bay leaf
- fresh herbs - for serving
- boiled eggs - for serving
- sour cream - for serving
Method of preparation
1. Boil meat with a whole onion for 1.5 hours.
2. Pour boiling water over young nettles. Let stand for 3 minutes.
3. Strain the broth, set aside the meat, and return the liquid, adding diced potatoes.
4. Fry carrots grated on a coarse grater in a pan with oil. After 3 minutes, add chopped green onions and dry garlic. Stir and fry for 5 minutes.
5. Divide the meat and return to the broth.
6. Wash and peel nettles, leaving leaves only.
7. After the broth with the added meat has boiled for 5 minutes, add the roast, salt, pepper and bay leaf. Cook for 10-15 minutes.
8. Add nettle, cook for 2-3 minutes. Add 1-2 tsp of lemon juice if desired.
9. Serve with sour cream, herbs and chopped chicken eggs.
