Perfect fluffy pancakes are made with kefir. But you can't just pour it into a bowl and start cooking the dough right away. It is important to follow the correct technology for adding all the ingredients so that the dough rises and does not spread in the pan.

Ingredients:

  • 300 g of kefir - 2.5%
  • a pinch of salt
  • eggs
  • 20 g of sugar
  • 260 g of flour
  • 0.5 tsp of soda
  • oil for frying (at least 2 mm)

The secrets of fluffy pancakes:

1. The kefir should be hot.

2. Rub the baking soda between your palms.

3. After the baking soda has been added, leave the dough for 10 minutes and do not stir it anymore.

4. Fry on one side without a lid.

5. When you turn them over to the other side, put the lid on, and they will double in size.
