The most dangerous oils for frying are sunflower and corn ones. These two types of oils are the leaders in the amount of polyunsaturated fats and their smoke point is not suitable for heat treatment.
Instead, if you want to fry food and still retain as much of its nutrition as possible, choose refined oils. A great example would be:
