The iconic Bird's Milk cake at home: what to add to the dough besides flour

Bird's milk cake is a dessert that has been known for generations. It is always prepared for various holidays and family tea parties. The mass just melts in your mouth and has a very delicate and pleasant taste. All this is due to a special cooking technology.

The idea of making the iconic Bird's Milk cake was published on the Instagram page of food blogger Tetiana Riabokin (mama_na_kykhne). In addition to traditional flour, semolina should also be added to the dough, as it makes the cake very soft.

Ingredients:

  • eggs - 3 pcs.
  • sugar - 200 g
  • water - 3 tbsp
  • baking powder - 1 tsp
  • flour - 170 g
  • cocoa - 3 tbsp.

Method of preparation:

1. Beat eggs with sugar until fluffy.

2. Add the rest of the ingredients.

3. Bake in the oven for 30-40 minutes (can be done in a slow cooker).

4. Cool the cake.

5. Cut into two parts.

Ingredients for the cream:

  • milk - 500 ml
  • semolina - 3 tbsp
  • sugar - 120 g
  • butter - 200 g

Method of preparation of the cream:

1. When the milk boils, add the semolina.

2. Cook for 3-5 minutes, leave to cool completely.

3. Beat butter with sugar and gradually add semolina one spoonful at a time and beat the cream.

4. If desired, soak the cakes with syrup, brush with cream, and decorate as desired.
