If you have frozen cherries in your freezer from the summer, you can make a very effective and simple dessert out of them. Namely, the Red Hat cake. It perfectly combines two types of dough, delicate butter cream, bright red jelly with a slight sourness and, of course, cherry filling.

The idea for the Red Hat cake was published on the Instagram page of food blogger Tally Koroleva (tallykoroleva).

Ingredients for the base:

  • 175 g soft butter
  • 100 g of sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 4 tbsp of milk
  • 150 g of flour
  • 2 tsp of baking powder
  • a pinch of salt
  • 15 g of cocoa
  • 1 cup of cherries in their own juice, you can use more

Ingredients for the cream:

  • 500 g fresh cottage cheese
  • 220 g of cream cheese
  • 100 g of sugar
  • 400 g of cream.

Additionally:

  • a glass of cherry juice + 0.5 packs of gelatin.

Method of making the dough:

1. Beat the butter and sugar with a mixer until fluffy. Add the eggs one at a time while continuing to beat. Add vanilla sugar, salt, flour, baking powder.

2. Divide the dough into two equal parts. Add cocoa and milk to one of them. Mix well. Put the light dough into the baking dish. Put the chocolate one on top. Spread the cherries over the dough, pressing them a little into the middle. Bake until a toothpick comes out dry. Cool.

3. Prepare the cream. Beat cottage cheese + cream cheese + sugar with a mixer until smooth. Add cream and beat again until fluffy.

4. Put the cake in the split mold and spread the cream on top. Put in the refrigerator for a few hours.

5. Add gelatin to the cherry juice, heat it until the gelatin is completely dissolved. Pour the cream on top and refrigerate again, preferably overnight.
