Rhubarb and meringue pie: an incredible German dessert
Rhubarb and meringue pie is one of the most popular desserts in Germany. This traditional dish impresses with its incredible combination of flavors and appearance.
The recipe for rhubarb and meringue pie was shared by food blogger Yulia Senych. On Instagram, she shared how to make the pie so that all guests would ask for more.
Ingredients for the dough
- Flour - 200 gr
- Sugar - 60 gr
- Butter - 80 gr
- Egg yolks - 3 pcs
- Baking powder - ½ tsp
- Vanilla sugar
- Salt - ½ tsp
Ingredients for the filling
- Rhubarb - 650 gr
- Sugar - 150 gr
- Starch - 50 g
- Cinnamon
- Vanilla sugar
Ingredients for meringue
- Proteins - 3 pcs
- Sugar - 175 gr
- Salt - a pinch
Method of preparation
1.Combine all the ingredients for the dough and knead. If the dough does not come together, add 1-2 tbsp of ice water.
2. Roll out the dough directly on the parchment and, if desired, trim the edges with a mold, cutting off the excess.
3. Put the dough into a baking dish and form the sides with the remaining dough.
4. Rinse the rhubarb, peel it and cut into small pieces.
5. Mix the rhubarb with sugar, cinnamon, vanilla extract and starch.
6. Put the rhubarb in the mold and put it in the oven preheated to 180 degrees for 30 minutes.
7. Prepare the meringue 10 minutes before it is ready. Whip the chilled whites with a mixer with salt and sugar until stiff peaks form.
10. Put the meringue and put it in the oven for another 10-15 minutes at 175 degrees.
