Perfect breakfast of scrambled eggs, avocado, and onion sauce
A light, nutritious, and most importantly, easy-to-prepare breakfast is exactly what you need before starting a hard day at work. Some people prefer to just drink tea with a sandwich, while others may find this not enough for the body to work efficiently.
In this case, you need to make breakfast nutritious and healthy. One of the options for such a first meal was shared on Instagram by food blogger my_happyfood.
Ingredients for 2 servings
- eggs - 4 pcs
- avocado - 1 pc
- onion - 1 pc
- cream - 130 ml
- butter - 30 g
- oil - 2 tbsp
- parmesan cheese - 30 g
- salt and pepper
- fresh herbs and vegetables to taste
Method of preparation
1. Peel the avocado and cut it into small pieces.
2. Fry half of the avocado until it becomes golden brown.
3. Mix the remaining avocado with the selected vegetables and herbs.
4. Peel and chop the onion.
5. Fry the onion in butter until transparent. Add cream, bring to a boil and remove from heat, immediately adding salt and pepper.
6. Lightly beat the eggs, combine with the fried avocado and vegetables and put the mixture in the pan. Cover and fry for 2 minutes.
7. Put the salad in the middle of the plate, cut the omelet in half, and put one part on the salad. Add onion sauce on top.
