Lean homemade mayonnaise: how to cook without eggs, milk and mustard
You can make thick, delicate, and, most importantly, healthy mayonnaise at home. Traditionally, it is made from raw or boiled eggs, or without eggs, and is based on milk, mustard, oil, and even avocado. If you are fasting, there is an alternative.
Food blogger Iryna Savrazhande (ira.savraz) shared a recipe for homemade mayonnaise without eggs and milk on her Instagram page, which can be eaten during Lent.
Ingredients:
- liquid from canned peas
- salt – 1\4 tsp
- sugar – 1\2 tsp.
- juice of 1\2 lemon
- mustard powder – 1 tsp.
- vegetable oil – 300 ml
Method of preparation:
1. Take one can of peas and strain the liquid into a blender bowl. Add salt, sugar, lemon juice, and mustard powder. Blend until smooth and slightly thickened.
2. Gradually add oil and continue to beat.
Important: if you want the mayonnaise to be liquid, add less oil; for a thick sauce, on the contrary, you need more oil.
