How to replace eggs in baking: 8 unexpected foods
If you don't have any eggs on hand for baking, it doesn't matter. You can easily replace them with other available ingredients. The most important thing is that they do not affect the texture of the dough and the baking in general.
Food blogger Yevhenia Malinevska who goes by ev.malinevska, shared on her Instagram page what ingredients can be used to replace eggs in baking.
Flax seeds: 1 egg = 1 spoon of ground seeds + 3 spoons of water. Mix the ingredients and leave to stand for 5 minutes.
Banana (it is better to choose an overripe one): 1 egg = 1\2 banana. Mash the fruit into a smooth puree.
Chickpea brine: 1 egg = 70 ml of brine. Whisk the liquid with a mixer – the mass will be fluffy and light in color.
Chia seeds: 1 egg = 1 spoon of ground seeds + 3 spoons of water. Mix the ingredients and leave them to stand for 5 minutes.
Peanut butter: 1 egg = 3 tablespoons of oil.
Silk tofu: 1 egg = 70 g of tofu. Before baking, beat it with a blender until smooth.
Pumpkin puree: 1 egg = 70 g of puree. Boil the pumpkin beforehand and beat it in a blender until smooth.
Apple puree: 1 egg = 60 g of puree.
