How to make tiramisu without raw eggs: the dessert will be safe to eat
The peculiarity of the classic tiramisu is that the cream for the dessert is made from raw eggs. This is not very safe because unpasteurized product is a source of bacterial growth. Therefore, the best option would be to use the following technology without raw eggs.
The idea of making tiramisu without raw eggs was published on the Instagram page of food blogger Olena Zeleniak (foodstories.helen). The cookies for the base can be prepared in advance.
Ingredients for cookies:
- 6 egg whites
- 140 g almond flour
- 30 g of tapioca
- 50 g of coconut sugar
Ingredients for the cream:
- 500 g mascarpone
- 1 jar of coconut cream, 22% fat (400 ml of regular cream can also work).
- 6 egg yolks
- 3 tbsp of honey
- vanilla extract
How to make the cookies:
1. Beat egg whites with a pinch of salt. Gradually add coconut oil while whipping.
2. Gently sift flour into the airy whites.
3. Put the dough into a special pastry bag or make it out of parchment paper.
4. Press thin cookies onto a baking sheet lined with baking paper.
5. Cook in the oven for 20 minutes.
6. The cookies can be baked several days before forming the tiramisu.
Method of preparation of the cream:
1. Beat yolks with honey in a water bath until thickened. Whisk very vigorously to prevent them from boiling over.
2. Remove the yolks from the water bath and gradually add mascarpone and vanilla extract. Mix well. Whip coconut cream until fluffy and add the egg yolks and mascarpone.
Formation of tiramisu:
1. Dip the biscuits in the brewed coffee and put them in the mold.
2. Put half of the cream on top.
3. Put the second layer of cookies (be sure to dip in coffee) and the second part of the cream on top of the cookies.
4. Put the tiramisu in the refrigerator overnight and sprinkle with cocoa before serving.
