How to cook Ukrainian kutia: classic version of the main Christmas dish

Kutia is a traditional Christmas dish that must be prepared on Christmas Eve. There are many variations, but the classic version of kutia is made of wheat. It is this cereal that is a symbol of prosperity, and the poppy seeds are a symbol of family.

Ingredients:

  • kutia - 400 g. (hulled wheat grains)
  • water - a liter
  • poppy seeds - 150 g
  • Greek nuts - 200 g.
  • raisins - 200 g
  • honey - 2 tbsp.

1. Usually, kutia preparation begins the night before. The grains should be washed well, covered with water and left overnight or at least for 2-3 hours.

2. Drain the water and pour clean water instead. Put on high heat.

3. As soon as it boils, turn the heat to low and cook for 1-1.5 hours. If the grain is cooked and the liquid remains, you can strain it with a sieve and leave it to cool.

4. Add 150 ml of water to the poppy seeds and cook over low heat until they increase in volume. Strain it with a sieve and then grind it with a blender.

5. Pour boiling water over the raisins for 10-15 minutes.

6. Dry the nuts in a dry frying pan for a few minutes.

7. Mix the porridge with honey.

8. Add the rest of the ingredients and mix thoroughly.
