How to cook Tiramisu properly: the right recipe
Tiramisu can be made with or without raw eggs. For the base, you can make a cream without eggs, and the taste of the dish will not change dramatically.
The cook shared a recipe for a delicious and tender tiramisu made with raw eggs.
Ingredients:
- savoiardi cookies - 200 g
- cream 33% - 250 ml
- mascarpone - 250 g
- chicken yolk - 4 pcs.
- powdered sugar - 2 tbsp.
- sugar - 55 g
- coffee
- cocoa
Method of preparation:
1. Separate the yolks from the whites. Mix the yolks with sugar in a water bath in a metal bowl and whisk continuously until light yellow. The water should boil moderately. Then remove from the heat and cool. It is important not to overdo it so that the yolks do not curdle.
2. Then whip cream with powdered sugar until soft peaks. Add mascarpone and ready-made egg yolks and whip again. The cream should be airy.
3. Make a cup of coffee, cool it down and pour it into a wide plate.
4. Dip cookies in coffee and put them in the mold. Pour the cream on top. Then dip the cookies in coffee again, put them in the mold and pour the cream over them. It turns out 2-3 layers. Cover the dessert with a plate or cling film and refrigerate overnight.
Then sprinkle with cocoa!
