How long to cook broth from a domestic rooster so that the meat is not hard: the right technology
It's the domestic rooster that makes the most delicious broth. But there is one problem: the meat often turns out to be quite tough, and the soup itself is quite cloudy. This is because you cook the dish incorrectly.
The idea of making a clear and rich broth from a domestic rooster is published on the Instagram page of food blogger Alina with the nickname alin_withkitchen. Remember that a young rooster cooks faster than an old one. And the transparency of the broth depends on how thoroughly you rinse the meat.
Ingredients:
- domestic rooster - 1.5 kg
- beef meat - 400 g
- onions - 2 pcs
- salt, bay leaves, peppercorns - to taste
- water
- herbs
- pasta (cook separately)
Method of preparation:
1. Rinse the two types of meat well. It is better to put the rooster in water overnight. The better you rinse it, the clearer the broth will be.
2. Boil water in a saucepan, add the poultry meat to the boiling water. Cook for about 1-1.5 hours over low heat, skimming off the foam if necessary.
3. Add the sliced beef, whole onion, and garlic.
4. Add the spices to the broth.
5. Cook for 1-1.5 hours until the meat is tender. If you have meat from an old rooster, you need to cook for 1 hour longer.
6. Boil the noodles separately. Serve the broth with them and a boiled egg.
7. Sprinkle with fresh parsley.
