Homemade croissants with cherries: the recipe for the most successful baking dough

Homemade croissants are delicious, flavorful pastries that can be made from different types of dough: puff pastry, shortcrust pastry, puff pastry, and yeast pastry. The latter two types are ideal if you want your croissants to be particularly fluffy and airy.

One of the culinary blogs (anny.cooking) on Instagram published a recipe for homemade croissants with cherries, based on a very simple yeast dough.

Recipe for croissants with cherries

Ingredients for 12 croissants:

  • flour – 350 g
  • water – 50 ml
  • milk – 100 ml
  • eggs – 1 pc
  • dry yeast – 7 g
  • sugar – 40 g
  • salt – 5 g
  • vanilla sugar – 1 p
  • soft butter – 50 g

The filling:

  • cherries – 200 g
  • sugar – 50 g
  • starch – 15 g
  • water – 50-70 ml
  • egg yolk (for greasing buns)

Method of preparation:

1. Prepare the filling in advance. To do this, combine all the ingredients, put on fire, and boil for 1 minute, stirring constantly. After that, cool completely.

2. To make the dough, combine all the dry and wet ingredients separately (except for the butter). Then mix them and leave for 15 minutes.

3. Add oil to the finished dough and knead the dough for 10 minutes to make it smooth. Then leave the dough in a warm place for 1 hour.

4. Divide the finished dough into 12 pieces, and form each piece into a ball. Stretch each of them into triangles and form croissants with the filling. Leave them for 1 hour.

5. Before baking, brush the buns with a mixture of egg yolk and water (1:2). Bake at 170 degrees for 25 minutes.

6. Grease the finished buns with butter.
