Hearty chicken roll with mushrooms and cheese for lunch: better than store-bought sausage
If you don't have time to have a proper lunch, you can use sandwiches with store-bought sausage. It's hard to call such food healthy. Therefore, it is a great idea to make homemade chicken roll. You spend a little time preparing it, put it in the fridge, and then you can simply slice it and put it on bread. The product is also stored for a long time.
The idea of making homemade chicken roll for lunch instead of sausage was published on the Instagram page of food blogger Inna (innakluchnik31). It turns out to be very satisfying.
Ingredients per 1 kg:
- whole chicken
- coriander - 1 tsp.
- ground black pepper - 0.5 tsp.
- dry garlic - 1 tsp.
- nutmeg - 1/4 tsp.
- cold cream - 100 ml.
- cheese and mushrooms for the filling
Method of preparation:
1. Cut meat into cubes. For 1 kg, use 20 grams of salt (10 grams of nitrite and 10 grams of ordinary salt). Weigh the meat together with the skin and salt the meat taking into account the weight of the skin. All the flavors will combine during the cooking process. Leave the skin.
2. Salt the meat for 1-2 days in the refrigerator.
3. Spread it out on a plate and pound with the sharp side of a knife until the structure is uniform and protein strands appear. It is important to keep the meat very cold at all stages.
4. Mix everything until smooth.
5. Spread out the cling film.
6. Sprinkle paprika on the place where the roll is placed.
7. Put the skin on the spices and then the minced meat on top.
8. If the roll is to be filled, flatten the minced meat and add the filling.
9. Wrap the roll as tightly as possible, not sparing the film layers.
10. You can wrap the roll with a thread. Hang in the kitchen to stabilize for 3-5 hours.
11. Pour cold water over the roll and put it immediately on low heat.
12. Bring the water temperature to 80 degrees and cook the roll for an hour.
13. Then remove the roll immediately and cool it under running cold water to stop the cooking process.
14. Then place in the refrigerator for 6-8 hours. Then you can cut and eat it on sandwiches.
