Healthy carrot cookies for children: without eggs and sugar

Sometimes you just have to force children to eat healthy vegetables and fruits because they prefer candy and cakes. But even those foods that don't excite kids can be served deliciously. For example, carrots make flavorful and soft cookies. You don't have to add sugar, because the vegetable has a naturally sweet taste.

The idea of making healthy carrot cookies without sugar and eggs was published on the Instagram page of food blogger Valeria Demchuk (mrs.demenchuk).

Ingredients:

  • carrot - 1 pc.
  • banana - 1 pc
  • cottage cheese / sour cream - 2 tbsp
  • whole wheat flour - 4 tbsp with a slide
  • olive oil - 1.5 tbsp
  • dried apricots - 5 pcs

Method of preparation:

1. Before cooking, rinse the dried apricots, and leave them in boiling water for 20 minutes.

2. Preheat the oven to 180 degrees.

3. Grate the carrots on a fine grater.

4. Mash the banana with a fork, mix the carrots and banana with the cottage cheese, oil, flour, and finely chopped dried apricots, and mix until smooth.

5. Moisten your hands with water and form balls.

6. Put on a baking sheet lined with parchment and bake for about 25 minutes, depending on your oven.

7. Cool completely after cooking.
