Beetroot is an ideal vegetable to make salads, appetizers, and sauces. Beets can also be baked and eaten raw. Oil, spices, and garlic will enhance the flavor of the vegetable. Prunes can be added to the salad for a spicy flavor.
Cook Yulia shared a recipe for a healthy salad with beets, feta cheese, and nuts on Instagram.
Ingredients:
- red beets - 1 pc.
- Feta cheese - 250-270 g
- walnuts - 50 g
- fresh herbs - a bunch
Dressing.
- olive oil - 2-3 tbsp.
- lemon juice - 1-2 tbsp.
- garlic - 2 cloves
- ground black pepper - to taste
Method of preparation:
1. Bake the beets, let cool, and cut into medium-sized pieces. Add herbs and toasted and chopped walnuts.
2. Cut the cheese randomly, and add to the beets.
3. Mix all the ingredients for the dressing and pour over the salad, toss and serve.
Sprinkle with sesame seeds if desired!
