Cossack kulish: how the legendary dish appeared and how to cook it
Kulish is a legendary Ukrainian dish made from millet in meat broth or just water and served with bacon, onions and garlic.
The history of kulish began 500 years ago, when the Ukrainian Cossacks were formed. Only unmarried men were admitted to the brotherhood - this was the most important condition. All of them had to be able to cook, or at least learn how to cook, under different conditions and from whatever the Lord God sent. One of the most popular dishes was kulish, which is similar to a thick soup or liquid porridge. It was so nourishing that it could replace an entire meal. That's why it became a staple on the Cossack menu.
Food blogger Irina Burdyug shared her recipe for the famous kulish with onions and bacon on her Instagram page, which you can prepare in just 30 minutes.
Ingredients:
- millet - 100 g
- water - 1 litre
- onion - 2 pieces
- bacon - 150 g
- salt
- butter
Method of preparation:
1. First, you need to prepare the millet. Namely, wash it thoroughly in cold and then in hot water.
3. Pour water into a saucepan and bring to a boil. Once it boils, add the millet and cook for 10-15 minutes.
3. Add salt and butter to the cooked millet. Stir to combine.
4. Next, cut the onion into half rings and fry until golden brown.
5. After the onion is cooked, the bacon is next. Cut it into thin strips and fry until crispy.
6. All the ingredients are ready, so you can assemble the porridge. Pour millet into a plate, put fried onions and bacon on top, and you're done!
