Cherry Beehive cake: frozen berries are suitable for the filling

Cherry Beehive is a spectacular dessert that will be a competitor for many popular desserts. Cherries make the dough very soft and juicy. In addition, frozen berries, which often remain in the freezer after the summer, are ideal here.

The idea for the Cherry Beehive cake was published on the Instagram page of food blogger Vita with the nickname vitala_foodblog.

Ingredients for honey cakes (products for 1 cake, but you need 2):

  • 2 eggs
  • 100 g of sugar
  • 20 g of liquid honey
  • 1 tsp of baking soda
  • 80 g of flour
  • 15 ml of vinegar 9%
  • 25 ml of vegetable oil

Ingredients for cherry tube cakes (products for 2 cakes):

  • 550 g of flour
  • 250 g of sour cream
  • 250 g of butter
  • 120 g of sugar
  • 18 g of baking powder
  • 1 kg of cherries
  • 20 g of potato starch

Method for making honey cakes:

1. Beat eggs, sugar, baking soda and honey with a mixer for 10 minutes.

2. Gently stir in the sifted flour with a spatula, add the oil and vinegar.

3. Bake immediately after kneading the dough. Cover a 20x30 baking dish with parchment and spread the dough evenly. Bake at 180 degrees for 10 minutes.

4. Cool, bake 1 more cake in the same way.

Method of making cherry tube cakes:

1. Beat soft butter with sugar, add sour cream, flour and baking powder. Quickly divide the dough into 12 equal balls and refrigerate for 1 hour.

2. Pit the cherries, put them on a sieve to drain the juice. Then mix with starch.

3. Roll out each ball of dough and wrap the cherries in it to make a 30 cm long tube with cherries in the middle.

4. Put 6 tubes on a baking sheet with parchment, flatten them well to form a cake. Prick with a fork and bake at 180 degrees for 22 minutes.

5. Do not overbake the cake, it should be light and soft.
