Ingredients:

  • bulgur – 1 cup (250 ml)
  • water – 500 ml
  • eggplant – 1 pc
  • zucchini – 1 pc
  • carrot – 1 pc
  • onion – 1 pc
  • bell pepper – 1 pc
  • tomatoes – 2-3 pcs
  • garlic – 3 cloves
  • olive oil – 75 ml
  • salt to taste
  • fresh herbs – a few sprigs for decoration

Method of preparation:

1. Rinse the bulgur thoroughly under running water. Put the washed cereal in a deep bowl and pour boiling water in a ratio of 1:2. Add salt to taste. Cover the dish and leave it for 30 minutes. During this time, the cereal will swell and be fully cooked.

2. Wash the bell pepper, remove the seeds, and chop it. Wash the carrots, peel them, and cut them into rings. Peel the onion and cut it into large pieces. Peel the garlic cloves, wash them, and cut them into thin slices.

3. Put the chopped vegetables in a deep frying pan with heated olive oil. Stirring occasionally, sauté the vegetables until soft over low heat.

4. Wash the eggplant and cut it into a large cube. Chop the zucchini in the same way. If the vegetables are young, you do not need to peel the skin. After 5 minutes, add the chopped eggplant and zucchini to the rest of the vegetables. Stir and continue frying the vegetables together over low heat for another 10 minutes. Add fresh tomatoes, cut into slices, to the vegetables. Add salt, stir, and continue to simmer for another 5 minutes.

5. Remove the vegetables from the heat and add the cooked bulgur. Gently mix all the ingredients. Garnish the dish with fresh herbs. Parsley, cilantro, dill, or basil will do.
