Homemade Ajarian khachapuri: a recipe for the most delicious Georgian appetizer

One of the most delicious dishes of Georgian cuisine is khachapuri. Moreover, it can be prepared in different ways and from different doughs, such as puff pastry.

The cook shared a recipe for delicious Ajarian khachapuri with egg yolk and grated hard cheese on Instagram.

Ingredients:

  • Warm milk - 170 ml
  • Warm water - 70 ml
  • Sugar - 1 tbsp
  • Dry yeast - 5 g
  • Flour - 300 g
  • Salt - 0.5 tsp
  • Oil - 2.5 tbsp
  • Suluguni cheese - 260 g
  • Yolk + butter

Method of preparation:

1. Dough: mix water, milk, add salt, sugar and yeast - mix. Then gradually sift the flour, pour in the oil and knead the dough with your hands.

2. Grease a bowl with vegetable oil (take into account the depth of the bowl, as the dough will rise approximately twice), put the finished dough and cover with a wet towel or plastic wrap. Leave in a warm place for 1-1.5 hours.

3. Divide the finished dough into three parts and roll out each layer, put grated cheese and roll out.

4. Put on a baking sheet, make an incision in the center, brush with egg yolk and bake for 20 minutes at 180 C.

5. Then add the yolk and butter around the edges and put in the oven for another 2-3 minutes.
