The legendary New York cheesecake with caramel and nuts: what to make the base of

New York is a popular dessert that is prepared all over the world. It is special because of its dense and very delicate texture. The mass holds its shape perfectly, because the cookie base does not fall apart and is very crispy. The highlight of this pastry is the caramelized nuts that should be placed on top.

The idea of making the popular New York cheesecake was published on the Instagram page of food blogger Julia Goncharova (julia.g.space). It goes best with coffee.

Ingredients for the base:

  • shortbread cookies - 300 g
  • butter - 100 g
  • nutmeg - 1/4 teaspoon

Ingredients for the filling:

  • cream cheese - 600 g
  • granulated sugar - 150 g
  • fat cream (30-35%) - 200 ml
  • eggs - 3 pcs.
  • lemon juice - 1 tsp.
  • orange - 1 pc (zest)
  • vanilla extract - 3 drops

Ingredients for salted caramel:

  • 120g sugar
  • 120 g of cream 33 - 35%
  • 30 g of water
  • 30 g of butter 82.5% - 30 g of water
  • 1/2 tsp salt
  • 100 g of roasted nuts

How to prepare the base:

1. Grind the biscuits in a blender, add the butter and nutmeg, mix well.

2. Spread the crumbs in a baking dish, which should be covered with parchment in advance.

3. Put the mold in a preheated 200-degree oven for 10 minutes. Remove and cool the base.

Method of preparation of the filling:

1. Add powdered sugar, lemon juice and vanilla flavoring to the cottage cheese.

2. Add eggs one at a time, mixing each well with a spatula. Do not use a mixer.

3. Add cream, mix again with a spatula.

How to assemble:

1. Pour the filling onto the cooled base in the mold.

2. Bake for 15 minutes at 200 degrees, then reduce the temperature to 110 degrees and bake for about 1 hour and 20 minutes. Be sure to use a container of water in the oven.

3. After turning off the oven, leave the cheesecake in the oven with the door ajar for an hour. Then cool to room temperature, wrap in cling film and refrigerate overnight.

To serve:

1. Cook the caramel: put sugar and water in a saucepan with a thick bottom.

2. Over medium heat, bring the mass to complete melting. Do not stir until the mass becomes amber in color.

3. Turn off the stove. Add the butter.

4. Mix it completely with the mass.

5. Add the hot cream in several stages.

6. Add salt. Heat for 1 minute.

7. Remove from heat, let cool. Add the nuts and spread the mixture on the cheesecake. Put in the refrigerator to harden completely.
