Real Ukrainian yellow tomato sauce pasta from a chef

Pasta is a dish most often found in Italian restaurants. But it will be truly Ukrainian if you add a sauce of fragrant yellow tomatoes. You can also make pasta from a very simple and elastic dough.

The idea of making delicious Ukrainian pasta was shared by famous Ukrainian chef Volodymyr Yaroslavskyi (yaroslavskyi_vova) on his Instagram page. Instead of homemade one, you can take regular pasta.

Ingredients for sauce for 3 large servings:

  • 500 g yellow tomatoes
  • 30-40 g garlic
  • 50 g white wine
  • oil, hot pepper, salt

Ingredients for pici (spaghetti):

  • 220 g wheat flour
  • 60 g corn flour
  • 140 g of soda

Method of preparation:

1. Incise tomatoes, blanch in boiling water for 30-40 seconds, move to ice water, peel and dice into large cubes.

2. Pour vegetable oil into a frying pan, set a low heat and add chopped garlic (you need quite a lot of it).

3. Fry the garlic over very low heat so that it does not change color.

4. Stop roasting with wine, add the split tomatoes and braise over medium heat for about 15 minutes.

5. Add salt and hot pepper to taste. Add fresh herbs (thyme, oregano, basil).

Method of cooking pici:

1. Mix wheat flour with corn flour, add baking soda and knead the dough.

2. Let it stand for 20-30 minutes and roll out thin bundles to resemble spaghetti as much as possible.

3. Boil the pasta in well-salted water for 3-4 minutes, add to the sauce and heat for a minute to a minute and a half. If necessary, you can add the water in which the spaghetti was boiled to form a sauce.

4. Add more oil.

5. Serve with mozzarella, burata or parmesan. The sauce itself can be stored in the refrigerator for about a week. Instead of pici, you can take any of your favorite types of pasta.
