How to cook kutia with wheat and honey syrup: an exclusive recipe from Oleksandr Hromliuk
Kutia is a symbol of Christmas and is cooked on Christmas Eve, as well as on Malanka and Vasyl. Each family prepares it differently, adding wheat, honey, nuts, rice, dried fruit, and poppy seeds to the dish. Sometimes even broth is added to the dish.
Chef Oleksandr Hromliuk shared a recipe for a delicious wheat kutia with rice, dried apricots, and dried cherries on Instagram.
Ingredients:
- Wheat - 200 g
- Basmati rice - 50 g
- Dried apricots - 25 g
- Poppy seeds - 2 tbsp
- Dried cherries - 10 g
- Walnuts - 15 g
- Orange zest - to taste
- Butter - 15 g
- Honey syrup - 25 g
Method of preparation:
1. Cook the wheat until soft.
2. Fry the rice in oil, then add water 1:2 and cook until tender.
3. Chop the dried apricots, cherries, and walnuts.
4. Pour boiling water over the poppy seeds.
5. For the syrup: cover the honey with water, cook, but very importantly, do not bring to a boil.
6. Assemble the kutia: put the cooked wheat in a bowl, then rice, dried fruits and nuts, poppy seeds, lemon zest and pour the syrup over it, mix and serve!
