Green buckwheat bread without flour and eggs: Yuliia Benkendorf shares her recipe
Bread is one of the most important products that almost all Ukrainians eat. Some people like wheat bread, some like rye bread, and some like it without any flour at all. It is worth noting that it is often made by housewives at home, using different doughs and different flours.
Cook Yuliia Benkendorf shared on Instagram a recipe for delicious green buckwheat bread, without flour or eggs, which you can easily make at home.
Ingredients:
- green buckwheat – 0.5 kg
- flax and sesame seeds – 2-3 tbsp.
- pumpkin seeds – a handful
- salt – 1-1.5 tsp.
Method of preparation:
1. Wash the buckwheat and soak it in clean water overnight.
2. Wash it well to get the mucus out.
3. Put the buckwheat in a blender and blend until smooth, or you can simply pass it through a meat grinder.
4. Put the finished mixture into a suitable container, cover it with a towel, and leave it to ferment for 12 hours in a warm place.
5. Add salt, seeds, herbs, and sun-dried tomatoes to the ready-made dough and mix.
6. Cover the mold with parchment, pour in the finished dough, and put in the oven for 1.5 hours at 180 C.
Let the bread cool completely, and if you're not ready to eat it all at once, you can safely freeze it.
