Cottage cheese casserole is an ideal option for a tasty, healthy, and quick breakfast that children love. It's worth noting that it takes only 20-40 minutes to cook, usually in the oven. And for lightness, you can add semolina to the dough, which will give the dish the perfect shape and structure.
Food blogger Anastasiia Solopii shared a recipe for a delicious, light cottage cheese casserole with raisins on Instagram, which is easy to prepare.
Ingredients:
- cottage cheese – 350 g
- semolina – 50 g
- butter – 10 g
- milk – 100 ml
- raisins – 50 g
- sugar – 50 g
- lemon zest – 1/2 tsp.
- vanilla sugar – a pinch
Method of preparation:
1. Pour the semolina with milk and leave for 10 minutes to swell well.
2. Grind the cottage cheese through a sieve or with a blender to avoid lumps and then add to the semolina.
3. Add eggs and sugar and mix well.
4. Pour boiling water over the raisins.
5. Grate the zest and add it to the dough along with the raisins, add the vanilla sugar, and mix.
6. Grease a baking dish, put the dough in it, and put it in the oven for 35-40 minutes at 180 C.
