Soup from the healthiest winter vegetable that everyone should eat
In winter, experts recommend eating a lot of seasonal vegetables, fruits, and herbs because they contain a lot of useful vitamins and minerals that are so necessary for the body. It is best to eat them raw. Among them, some of the most useful winter vegetables are pumpkin, beets, cabbage, and carrots. They can be cooked in different ways: baked, boiled, added to salads, or eaten raw.
Blogger Inna Levenets shared on Instagram a recipe for a delicious and healthy soup made from beets, garlic, and spices that will surprise you with its taste.
Ingredients:
- beets – 2 pcs.
- onion – 1 pc.
- garlic – 2 cloves.
- grated ginger – 2 tsp.
- apple cider vinegar – 3 tbsp.
- water or vegetable broth – 6 cups
- pumpkin seeds – 50 g
- cumin – 2 tsp.
- black pepper – 1 tsp.
- ground coriander – 1 tsp.
- peanut butter – 2 tbsp
- coconut milk – 200 ml
- lime juice – 2 tbsp.
- salt – to taste
- olive oil
- parsley
Method of preparation:
1. Cut the onions into small cubes.
2. Pour olive oil into a saucepan and fry the onions until golden brown.
3. Wash, peel, and chop the beets, add to the onions, and fry for a few minutes.
3. Pour in the water/broth, add the apple cider vinegar, cumin, coriander, salt, black pepper, chopped garlic, and ginger.
4. Bring to a boil.
5. Reduce the heat and simmer the soup until the beets are tender.
6. When the beets are soft, remove the soup from the heat.
7. Add peanut butter, pumpkin seeds, coconut milk, lime juice.
8. Blend this mixture with an immersion blender.
9. Season the mixture with salt and pepper and add lime juice.
How to serve: Chop the parsley and sprinkle it over the soup in the bowl, and add pumpkin seeds and a little lime, if desired.
