Why fry cutlets on parchment: healthy alternative to a familiar dish
Classic fried cutlets are quite fatty and high in calories. However, there is an alternative: you can make fried cutlets on parchment. The parchment absorbs excess oil and fat, and the cutlets remain juicy and tender. Most importantly, they are not dry.

Ingredients:
- minced meat - 400 g
- onion - 1\2 pcs
- eggs - 1 pc
- white bread (soaked in milk) - 1 slice
- breadcrumbs - 1 tbsp
- salt, pepper, spices
- hard cheese (mozzarella or sulguni)
Method of preparation:
1. Chop onion. Add it to the minced meat.
2. Soak bread in milk in advance. Then squeeze it out and add to the minced meat.
3. Add egg, breadcrumbs and spices to the minced meat. Mix well.
4. Cut hard cheese into cubes.
5. Form patties with wet hands, putting a cube of cheese inside.
6. Place a sheet of parchment (smooth side up) on a frying pan. Put the cutlets on the parchment and fry them on both sides.
