Why cutlets turn out tough: what ingredient should not be added
Homemade cutlets can be made from any meat, but the most delicious ones are made from chicken fillet and minced pork, with lard added. Lard will make the cutlets juicy and soft.

Cook's tip: don't add egg white to the minced meatballs, as it coagulates instantly at high temperatures. An alternative is potatoes or starch.
Cooks also advise adding soaked loaf pulp to the minced meat. It is the flesh that gives the dish its juiciness. But if you don't want to use a loaf, you can add semolina.
