Ingredients:
- halloumi cheese - 250 g
- orange - 1 pc.
- arugula - 1 bunch
- cherry tomatoes - 200 g
- olives - 100 g
- olive oil for frying
Ingredients for the dressing:
- olive oil - 4 tbsp.
- balsamic vinegar - 1 tsp.
- herbs - 1/2 tsp.
- salt - 1/2 tsp
- freshly ground pepper
Method of preparation:
1. Make the dressing: mix all the ingredients.
2. Peel the orange (including the white films), and cut it into halves.
3. Cut the cherry tomatoes in half.
4. Cut the halloumi into slices about 1 cm thick. Wash and dry the arugula.
5. Heat the olive oil in two frying pans (you need to fry in two at the same time so that both tomatoes and cheese are warm, but you can also fry in one in turn – first cheese, then tomatoes). Fry the tomatoes for two minutes over medium heat on each side. Fry the cheese on both sides until golden brown (2 minutes on each side over a slightly higher than average heat).
6. Put the arugula on the dish, then the orange, olives, tomatoes, and cheese on top, and pour the dressing.
