Simple and delicious cookie cheesecake: no need to roll out the dough
Cheesecake is one of the easiest desserts to make at home. That's because the base can be made from ordinary cookies, which just need to be crushed. The mass is baked quickly enough and does not require kneading the dough.
The idea of making a cheesecake based on cookies was published on the Instagram page of food blogger Juliia Vilich (julia_vilich_food_blog).
Ingredients for the base:
- 280 g Oreo cookies
- 120 g of butter 82% fat
Method of preparation:
1. Remove the cookie filling with a knife.
2. Grind the biscuits into crumbs with a blender or a rolling pin. Add the melted butter.
3. Mix with a spoon. The finished mass should stick together well in your hands when squeezed.
4. Spread the crumbs on the bottom of a baking dish covered with parchment. Use your fingers to form the bottom and sides, pressing the crumbs into the mold. Put the mold in the freezer for 30 minutes.
Ingredients for the vanilla cream cheese part:
- 270 g of cream cheese
- 230 ml of fatty cream from 30%
- 80 g of powdered sugar
- 2 sachets of vanilla sugar
- 1 large egg
- 1 tbsp a spoonful of cornstarch with a small slide
How to make the vanilla curd mass:
1. Combine cottage cheese, cream, egg, powdered sugar and sugar.
2. Mix until smooth.
3. Then add the starch and mix again.
Ingredients for the chocolate part:
- 220 g of cream cheese
- 100 ml of fatty cream from 30%
- 70 g of milk chocolate
- 30 g of powdered sugar
- 1 small egg
- 1 tbsp cornstarch
Method of preparation:
1. Melt the chocolate in a water bath or in pulses in the microwave.
2. Let it cool to room temperature.
3. Combine all other ingredients with a whisk until smooth. Add the chocolate at the very end.
To assemble the cheesecake:
1. Distribute the masses in pastry bags. Make cuts.
2. First, spread a part of the vanilla mass with a snake, then the entire chocolate mass.
3. Top with the remaining vanilla.
4. Bake in a preheated to 180 degrees oven for 30 minutes.
5. Then reduce the temperature to 150 degrees.
6. Bake for 35-40 minutes. The finished cheesecake should "shake" in the middle, but the sides should be stable.
7. Let it cool in the oven with the door ajar. Then put it in the refrigerator for 4-5 hours.
Ingredients for the cherry topping:
- 270 g of cherries
- 50 g of sugar
- 10 g of starch
- 30 ml of water
Method of preparation:
1. Add sugar, starch and water to the cherries.
2. Put on a small fire.
3. With constant stirring, bring the mass to a boil. After boiling, cook for about a minute until thickened.
4. Let cool and spread on the finished cheesecake. Put it in the fridge for an hour.
