Beets can be used to make not only borscht, but also light, tasty salads. Beets go well with all vegetables, as well as mustard, herbs, and spices.
The cook shared a recipe for a delicious and light beet salad with cheese and dressing on Instagram.
Ingredients:
- beets - 2 pcs.
- salad mix
- Gorgonzola cheese - 50 g
- pistachios - 10 g
- leek - 5-10 g
Sauce:
- grain mustard - 1/2 tsp.
- honey - 1 tbsp.
- olive oil - 1 tbsp.
- lime juice - 1 tsp.
- soy sauce - 1 tsp.
- black pepper
Method of preparation:
1. Bake beets in the oven at 180 C for 40 minutes to 2 hours depending on the size. Check for softness with a toothpick.
2. Cut them nto medium cubes.
3. Mix all the ingredients for the sauce.
4. Put the beetroot and herbs in a dish. Pour the sauce over, top with cheese, and sprinkle with nuts and onions.
