Light salad with zucchini and radish: an original recipe from Yevhen Klopotenko
Vegetable salad is the best dish, as it is based on healthy and tasty vegetables that can be seasoned with aromatic oil, add any cheese and seeds. And any salad will be a great addition to any dish.
Chef Yevhen Klopotenko shared a recipe for a delicious zucchini and radish salad with a delicious citrus dressing on his website.
1. Choose a young zucchini with no seeds inside and a soft skin.
2. Radishes should be sweet and dense, without bitterness.
3. Radishes and zucchini go well with spinach, iceberg lettuce, cucumbers, basil and garlic.
4. Lemon or lime, as well as tasty and aromatic oils such as cedar, corn, linseed, or pumpkin, are ideal dressings for the salad.
5. It is very important to know that the longer this salad stands, the better the vegetables will marinate, the more delicious the salad will be.
Ingredients:
- zucchini - 200 g
- radish - 200 g
- pine nuts - 20 g
- olive oil - 2 tbsp
- juice of one lemon
- dill - a bunch
- salt, pepper - to taste
Method of preparation:
1. Wash and cut the zucchini and radish into slices, put them in a bowl.
2. Wash the dill and chop it finely, add the radish.
3. Season the salad with salt and pepper, drizzle with lemon juice and olive oil, mix and sprinkle with nuts.
It's better not to eat the salad right away, but to let it sit in the fridge for 20-30 minutes, so the vegetables will marinate better and the salad will be even tastier!
