Kutia with halva, nuts and uzvar: recipe for the main Christmas dish

Kutia is the main Christmas dish, which is a sacred symbol of eternity and procreation. In Ukrainian traditions, it is customary to cook kutia twice: "hungry kutia" and "rich kutia". Rich kutia or the Holy Supper is prepared on Christmas Eve. The "hungry kutia" is a ritual dinner before Epiphany.

The FoodOboz editorial team shares a recipe for a delicious kutia with halva, walnuts, honey and uzvar.

Ingredients:

  • 350 g. polished wheat
  • 200 g. ready-made ground poppy seeds
  • 100 g. walnuts
  • honey
  • compote
  • halva

Method of preparation:

1. Sort and rinse wheat. Cover with water so that it covers the wheat by 4-5 cm. Bring to a boil, reduce heat and cook for 1.5-2 hours until soft. If the wheat is not yet cooked and the water has already boiled, add a little more hot water and cook until tender.

2. For uzvar, rinse dried fruits thoroughly under running water, put them in a saucepan and cover with water. Cook on low heat for 30 minutes under a lid to make the taste more intense, let cool, then add honey or sugar, and stir until the sugar dissolves.

3. When the wheat is cooked, add poppy seeds and chopped nuts and stir. Pour broth, bring to the desired thickness, and stir. Finally, add halva and drizzle with honey.
