How to make fluffy dough for bagels: secrets from Liliia Tsvit

Bagels are a versatile pastry that can feed the whole family. To make this dessert fluffy and crusty, you need to follow a special dough preparation technique. Delicate buttercream is ideal for the filling.

The idea of making delicious bagels with cream was shared by the famous Ukrainian pastry chef Liliia Tsvit (lilijatsvit) on her Instagram page.

Recipe for bagels with cream

Ingredients for the dough for 12 pcs:

  • milk – 0.5 l
  • sugar – 150 g
  • flour – 750 g +/- 50 g
  • dry yeast – 1 pack (12 g) or fresh – 40 g
  • eggs – 1 pc.
  • vegetable oil – 50 ml

Ingredients for the cream:

  • milk – 0.5 l
  • sugar – 100 g
  • pudding – 1 p. 40 g
  • butter – 30 g
Preparing dough for bagels

Method of preparation of the cream:

1. Add cherry pudding to 200 ml of milk – stir until dissolved.

2. Add sugar to 300 ml of milk and put on fire.

3. Add the dissolved pudding to the boiling milk, stirring.

Preparing cream for dessert

4. Cook until boiling, remove from heat. Add a little butter, and stir.

5. Cover closely with cling film, and cool to room temperature.

Method of preparation of the dough:

1. Pour 0.5 liters of milk into a large bowl, add sugar, stir until dissolved.

2. Add 8 tablespoons of flour from the total amount and dry yeast.

3. If the yeast is pressed, dissolve it in the milk. Knead the liquid dough.

4. Cover with cling film and set aside for 1 hour.

5. Mix the egg and oil until smooth.

6. When the dough rises, add the egg mixture and mix.

7. Add flour in portions, and knead the dough.

Forming bagels from dough

8. Brush with oil and knead for 10-15 minutes.

9. Divide the dough into 12 equal parts and form balls.

10. Cover, and leave for another 15 minutes.

11. Roll out each ball into an oval, put the cream and close it well, elongate.

12. Cut the rest of the dough lengthwise and roll the bagel.

Ready-made baked bagels

13. Put them in the mold and leave them warm for another 20 minutes.

14. Brush with egg, leave for a few minutes to dry, and bake at 180 degrees for 40 minutes.
