Stages of cleaning herring:
1. Rinse fish under running water.
2. Remove the head and entrails and rinse the carcass again.
3. Make an incision and remove the fin.
4. Pull up the skin at the cut and pull it off in one motion.
5. Separate the fillet from the bone as follows: take the herring by the tail with one hand and separate the fillet from the ribs with the other. Then hold the spine with two fingers and separate the rest of the fillet again.
