Butter, vinegar or acid: what will preserve the bright color of borscht
Borsch is a traditional Ukrainian dish that every housewife loves and knows how to cook. It can be made with meat, beans, vegetables, sprats and crucian carp. When serving, be sure to add herbs and sour cream.
The FoodOboz editorial team shares useful tips on what to add to borscht to make the beets bright.
Effective ways to make your borscht colorful:
1. How to cook beetroot
According to cooks, it is better to bake beets in foil in the oven. Then grate them and put them in the borscht pot at the end of cooking. This way, the beets will not lose their color.
2. How to roast beets for borscht
Fry onions, carrots, and beets separately. This way, the beets will retain their color and not color the other vegetables. But if you do fry all the vegetables together, just add beet juice to the borscht at the end.
3. Why you need to add citric acid or vinegar
The acid will keep the beets bright red. So when roasting, simply add a spoonful of lemon juice or a few drops of vinegar to the pan.
4. Why do you need to add butter?
When frying beets, add a spoonful of butter to the pan, this will make their color very rich.
