Liver mousse is a very tasty and healthy appetizer that requires only a few ingredients: liver, onions, butter, and strong alcohol. It's very simple and quick to prepare. Just fry the liver properly and beat everything until smooth.

Recipe

Ingredients:

  • chicken liver - 350 g
Fried chicken liver
  • onion - 1 pc
  • garlic - 1 clove
Raw garlic
  • strong alcohol (cognac, port, brandy, sherry) - 50 ml
  • cream - 100 ml
Butter
  • butter - 30 g
  • nutmeg - a pinch
Spices
  • salt, pepper - to taste

Method of preparation:

1. Cut onion and garlic into small cubes and fry over low heat in butter until soft and slightly golden. In the process, add 20-30 ml of alcohol and wait until it evaporates.

2. Wash liver and dry it on a paper towel. Remove the films and quickly fry on each side in vegetable oil over high heat, spreading in a single layer. The liver should remain pink inside after frying.

3. Deglaze the juices remaining in the pan after the liver with 20 ml of alcohol and add to the onions.

4. Add ground nutmeg to cream and bring to a boil. Cool.

5. Blend the cooled liver with a blender together with the flavored cream.

Preparation

6. Add salt, ground pepper, stewed onions and soft butter in small portions. Beat until creamy.

7. Rub the finished paste through a sieve, put it in a suitable dish and put it in the refrigerator.
