Ajarian khachapuri: a recipe for thin dough for flavorful and successful baking
Khachapuri is an ideal alternative to pies. They can be prepared in different ways, but cheese always remains an indispensable product.
Cook Oksana shared a recipe for delicious Ajarian khachapuri with two types of cheese on Instagram.
Ingredients:
- Flour - 500 g
- Dry yeast - 7 g
- Water (warm, not hot) - 300 ml
- Salt - 10 g
- Sugar - 1 tbsp
- Oil - 3 tbsp. l.
Filling:
- Suluguni cheese - 250 g
- Adyghe cheese - 250 g
- Egg - 1 pc.
- Water - 50-70 grams
- Salt (the amount depends on the saltiness of the cheese)
Additionally:
- Yolks - 1 pc.
- Butter - 10 grams
Method of preparation:
1. Mix flour, sugar, salt and dry yeast, add warm water and knead the dough. Then add the oil in two passes, mix well.
2. Put the dough in a bowl greased with oil, cover with a towel or plastic wrap and place in a warm place. You can preheat the oven, turn it off, and put a glass of boiling water in it for 40-60 minutes.
3. Filling: grate the suluguni, crumble the Adyghe cheese with your hands, add the egg, salt and water, mix well.
4. When the dough is ready, divide it into 2 or 4 portions and roll it out by hand. The center should be very thin. Add a little cheese to the sides, if desired. Form the khachapuri with your hands, add the cheese filling to the center and bake for 20-30 minutes at 180 C.
5. Take out the khachapuri, add 1 egg yolk to each and put in the oven for another 2 minutes. Before serving, add a spoonful of oil, mix the filling and you're ready to eat!
