Beets are a very healthy vegetable that can be both eaten raw and baked. It makes delicious salads, appetizers, and first courses.

A cook shared a recipe for delicious beet caviar with apple and eggplant on Instagram.

Beet dishes

Ingredients:

  • beets - 500 g
  • eggplant - 500 g
  • apples - 500 g
  • sugar - 3 tbsp
  • salt - 1 tbsp
  • vegetable oil - 100 ml
  • apple cider vinegar - 1 tbsp

Method of preparation:

1. Cut the eggplant into small cubes and fry it. Wash the apples, peel and cut them into small cubes, and then add to the eggplant.

2. Wash, peel and grate the beetroot. Add the grated beets to the rest of the ingredients. Add salt and sugar to the mixture. Stir the ingredients. Leave the beets with the eggplant and apples for 1 hour to let them juice.

Beet with salt.

3. After 1 hour, pour odorless vegetable oil into the caviar and stir. Cook under a lid over low heat for 40 minutes. 5 minutes before the end of cooking, add apple cider vinegar to the caviar and stir.

How long to cook.

It will be delicious both hot and cold!
