Ingredients:
- silver carp (fillet) - 1 kg.
- onions - 2-3 pcs. vinegar (9%) - 100 ml.
- vegetable oil - 100 ml.
- salt - 2 tablespoons,
- sugar - 1 tbsp.
- bay leaf - 2-3 pcs.
- black peppercorns - 10-12 pcs.
- allspice - 5-6 pcs.
- cloves - 3-4 pcs,
- coriander (seeds) - 1 tsp.
- water - 200 ml.
Method of preparation:
1. Rinse the silver carp fillet thoroughly under cold water. Cut the fish into portions about 1.5-2 cm thick.
2. Salt the fish (about 1 tablespoon of salt) and leave it to marinate for 2-3 hours in the refrigerator so that it is well salted.
3. In a saucepan, combine water, vinegar, oil, salt, and sugar, add bay leaf, black peppercorns, allspice, cloves, and coriander. Bring the marinade to a boil, then reduce the heat and cook for another 5 minutes. Cool the marinade to room temperature.
4. Rinse the fish from the salt and dry it with paper towels. Cut the onion into thin rings. Put the fish and onions in layers in a deep bowl: first, a layer of fish, then a layer of onions, and so on until you run out of food. Pour the cooled marinade over the fish so that it completely covers all the pieces.
5. Cover the container with cling film and refrigerate for at least 24 hours to marinate the fish well. The longer the fish is marinated (up to 48 hours), the more intense its flavor becomes. If desired, you can add a little mustard or garlic to the marinade to spice it up.
