Real pistachio ice cream at home: how to make it
It is pistachio ice cream that is one of the most popular all over the world. This dessert has a special nutty taste and a very pleasant color. If you used to buy it in stores, try make it at home. It will be much healthier.
- 3 yolks
- 150 g milk
- 100 g sugar
- 2-3 tsp. pistachio paste
- 250 g of cold cream 33-35%
Method of preparation:
1. Rub yolks with sugar and milk.
2. Add the pistachio paste and put over a low heat.
3. Stirring constantly, bring the mixture to a lightly runny consistency and a temperature of 85 degrees.
4. Remove from heat and cool completely.
5. Whip cream to soft peaks.
6. Add the creme anglaise and mix everything thoroughly.
7. Transfer the mixture to an ice cream maker and churn until thickened, 15-30 minutes.
8. Then transfer to a container. Place in the refrigerator to set.
9. If there is no ice cream maker, put the mass in a container, take out and thoroughly stir the ice cream every 15 minutes in 2-3 hours.
