Pancake coffee cake with curd cream in 20 minutes: a simple recipe
The perfect dessert for coffee and tea is a light cake. You can make them from pita bread, custard, pancake, waffles, and just jelly. The cream can be made from sour cream, cottage cheese, condensed milk, yogurt, and berries.

Ingredients:
- flour – 50 g
- sugar – 200 g
- eggs – 2 pcs.
- oil – 50 ml
- milk – 150 ml
- instant coffee – 10 g
- boiling water – 100 ml
- baking soda – 1 tsp.
- vinegar
For the cream:
- cottage cheese – 400 g
- sour cream – 170 g
- sugar – 50 g
- gelatin – 10 g
- water – 30 ml
Method of preparation:
1. Dough: mix flour with sugar, add salt, and eggs, pour in vegetable oil, milk, add coffee, and baking soda slaked with vinegar, pour boiling water, and beat with an immersion blender until smooth.
2. Heat a frying pan and fry thin pancakes. Put them on a plate and let them cool.
3. Cream: mix the cottage cheese with sour cream, add sugar, and blend until smooth.
4. Mix the gelatin with water and let it swell.
5. Pour the finished gelatin into the curd cream and mix.
6. Assemble the cake: spread the cream over the pancakes, and refrigerate for a few hours to soak it well.
Cut the finished cake into portions and serve!
