Green borscht can be cooked with or without meat, but it tastes better with chicken broth. Add garlic, lemon juice, and spinach for a bright flavor.
The cook shared a recipe for a delicious green borscht with boiled eggs, spinach, and lemon on Instagram.
Ingredients:
- chicken broth - 4 liters.
- potatoes - 5 pcs.
- carrots - 1 pc.
- onion - 1 pc.
- garlic - 3-4 cloves.
- sorrel - 150 g
- spinach - 100 g
- lemon - 1/4 pc.
- salt and pepper
For serving:
- herbs - dill, parsley, green onions
- sour cream
- boiled eggs
- cheese, for example feta cheese
Method of preparation:
1. Cook chicken broth. Add diced potatoes.
2. Sauté grated carrots with chopped onions and garlic. Add to the potatoes and cook for 10 minutes.
3. During this time, blanch spinach with sorrel. Rinse well, chop and blanch for 1 minute in boiling water with lemon juice. Drain and add to the soup. Cook for about 15 minutes.
4. Season with salt and pepper, add a little more lemon juice and boiled eggs.
Serve with sour cream!
