Tastier than a sponge cake: aromatic carrot cake with citrus and delicate cream
Carrots are a very healthy and tasty vegetable, they contain the most vitamins A, C, E, K. It is worth noting that they can be used not only for salads and snacks but also for desserts.
The cook shared a recipe for a delicious, flavorful, and easy-to-make carrot cake on Instagram.
Ingredients:
- 2 eggs
- 180 g. of sugar
- 180 g. of carrots
- 100 ml. of oil
- 180 g. of flour
- 1 tsp. of cinnamon
- 1 tsp. of baking powder
- 0.5 tsp. of baking soda
- 70-100 g. of nuts
- 50-70 g. of cranberries, raisins
For the cream:
- 180 g. of cream cheese
- 50 g of powdered sugar
- 1 tsp. of lemon juice/lemon flavor
- lemon zest
Method of preparation:
1. Beat the eggs with sugar until white and add the finely grated carrots, butter, and cinnamon.
2. Next, add the flour, baking powder, and baking soda and mix until smooth. Optionally, add chopped nuts and pre-washed and dried raisins and cranberries, and mix.
3. Pour the dough into a baking dish and place in a 180-degree oven for 25-30 minutes. Check for doneness with a wooden stick (it should come out of the dough completely dry). Remove from the mold and cool completely.
4. For the cream: mix cream cheese with powdered sugar, add lemon zest and juice, mix everything.
Spread the cream over the cake and decorate as desired!
