The main ingredient of the sponge cake - eggs - must be taken out of the refrigerator in advance. The same goes for milk, if you use it. It is important that all products are at room temperature.
Poorly beaten eggs
The key to a fluffy sponge cake that won't fall during baking is well beaten eggs. You can beat them whole or separate the whites from the yolks. In the first case, the eggs should leave a pattern after whipping and drip off the mixer tips. In the second case, the whites should be fluffy and dense, and they should be added to the batter in such a way that they do not lose their airy texture.
Sugar is not dissolved
At the whipping stage, sugar should be added gradually so that it has time to dissolve evenly. It is important that there are no crystals in the batter.
Too long mixing
When preparing a sponge cake using the classic technology, remember that flour should be added gradually and mixed very carefully. You do not need to do this for a long time because the mass can settle.
Ready-made batter is kept at room temperature for a long time
This means that as soon as you make it, you need to pour it into the mold and put it in the oven to bake.
Opening the oven too early
Once you have put the sponge cake in the oven, it is not recommended to open the door at all for the first 30 minutes as even minimal air intrusion will cause the sponge cake to fall.
